Benefits of Olive Oil

Recipe: Paola's Black Eye Peas Summer Salad

  • 1 pound frozen black eyed peas
  • 1 medium red onion chopped
  • 1 cup apple cider vinegar
  • 1 can black olives sliced (6 oz)
  • 2 tomatoes diced
  • 1 bell pepper (red or green) diced
  • 2-3 tablespoons salt to taste
